Ingredients:
• 2 dried red chilies
• 1 teaspoon cumin seeds
• 1 teaspoon coriander seeds
• ½ teaspoon fennel seeds (saunf)
• ½ teaspoon black peppercorns
• ½ teaspoon cinnamon powder (or 1 small cinnamon stick)
• 2 cloves
• 1 star anise (optional, for extra aroma)
• ½ teaspoon black salt (kala namak)
• 1 teaspoon regular salt
• 1 teaspoon sugar
• 1 teaspoon dry mango powder (amchur)
• ½ teaspoon red chili powder
• ¼ teaspoon turmeric powder
• ½ teaspoon sesame seeds (til) (optional)
Instructions:
Step 1: Dry Roast the Spices
1. Heat a pan on low flame and add cumin seeds, coriander seeds, fennel seeds, black peppercorns, cloves, cinnamon, and dried red chilies.
2. Dry roast for 1-2 minutes until fragrant. Be careful not to burn the spices.
Step 2: Grind the Masala
1. Let the roasted spices cool completely.
2. Transfer them to a grinder and add black salt, regular salt, sugar, amchur, red chili powder, turmeric, and sesame seeds.
3. Grind into a fine powder.
Step 3: Store & Use
• Store the Dabeli Masala in an airtight container for up to 2-3 months.
• Use 1 teaspoon of Dabeli Masala per serving to make delicious Dabeli or sprinkle it over chaats for extra flavor.
